Pour This Bubbly Bottle of Kir Royale

Clinton Vineyards, in the Hudson Valley town of Clinton Corners, has been producing cassis black currant wine and sparkling seyval blanc for years. The winery has been known for its seyval blanc, a French American hybrid grape that is starting to achieve cachet. Now, Phyllis Feder, who has been the winery’s sole owner since her husband, Ben Feder, died in 2009, has put two and two together and is using the sparkler and the liqueur to bottle a Kir Royale. The pale lavender quaff cloaks the sparkler in a veil of elegant fruit without shielding its bright acidity. The bottle is sealed with a simple soda cap, as is used by Champagne makers for first fermentation.
